Fish Tacos – My Fav!

The phrase “Fish Taco” always gets my attention. This weekend, I enjoyed two of the best I’ve ever eaten at Duffy’s Cherry Cricket  in Denver, CO. My sweet husband took me to Denver for our 13th anniversary and this restaurant was recommended to us twice by the time we checked in the hotel. The place was packed inside and patio seating was a 20 minute way. This local hot spot is known for their burgers (which I discovered when checking in on FourSquare). But I could not resist ordering the fish tacos and I’m SO glad it did. The sour cream, guacamole and black olives made the dish!

But when cooking at home, I want a healthier option. Here is my healthy, yummy and friend-approved recipe.

Broil the Tilapia with a nice coating of the following seasonings …

  • Cavenders
  • Tony’s Creole Seasoning
  • Minced Garlic
  • Pepper (optional)

Turn the Tilapia 2 or 3 times applying more seasoning each time – depending on your own taste.

Top the fish with a light dusting of parmesan cheese and bread crumbs for the last minute of broiling – just long enough for the cheese to brown slightly.

Place on your warmed multi-grain tortilla and add

  • diced tomatoes
  • diced avocados
  • spinach leaves
  • salsa
