Uncle’s Barbeque Shrimp Recipe

Yesterday, you met my mom.  She’s an excellent cook. Those of you who know her are nodding your head right now aren’t you!

I spent a few days with mom and our family at the beach last month. Mom saved yummy looking recipes throughout the year and blessed us with fine food each night at the beach house. Our last night on vacation together, we helped to prepare Uncle’s Barbeque Shrimp. It’s not named after one of our uncle’s, but a brand of barbeque sauce. I am willing however to let Mel’s uncle – adorably called “Uncle” claim it!

It’s simple, fast, and YUMMY!  I’ve made it twice since our time at the beach with rave reviews.

Uncle’s Barbeque Shrimp  (no grilling required)

2 cups Uncle’s Barbeque Sauce (any brand will do)
1 stick butter
1 tablespoon ground pepper
Zest & juice of 1 lemon
2 large garlic cloves, minced
1 cup of green onions, chopped (optional)
3 pounds jumbo (16-20 count) shrimp
French bread for serving (optional)

Preheat oven to 400

Melt butter with the barbecue sauce in a saucepan over medium-high heat. Add pepper, thyme, lemon zest, juice, and garlic.  Mix and simmer briefly, about 2 minutes.

Place shrimp in a 9×13 glass baking dish and pour the sauce mixture over it, stirring well. Cook for 15-20 minutes, turning once. Sprinkle green onions over the top and serve hot with plenty of crispy hot French bread.
